Cahors are wines which are full of flavour !
They have a consistency, a presence in the mouth which is memorable.

 
They are incontestably rich and their velvety tannins clothe the palate harmoniously.
What distinguishes them from the other great wines of the South-west and from the Argentinian Malbecs is their freshness and liveliness.
Linked to the natural acidity of the wine, these qualities leave the palate clear and five the Cahors their exceptional aptitude for aging. When young, the wines have a dense, often even black appearance. Their rich and complex scents evolve in a surprising way over time.

This deep-coloured wine is expressive and harmonious; its complex nose evokes blackcurrant, spices and toasted fruit. Meaty and powerful in the mouth, its velvety quality is proof of the perfect mastery of the techniques of aging in oak. Black fruit, liquorice and chocolate aromas complete the full expression of the wine.
Serve decanted (or opened several hours previously) before enjoying at 15-16°.
Suggested accompaniment: game foie gras, truffles, woodland mushrooms, tournedos, milk fed lamb.

Soils Solely on lower quaternary mindel period deposits of the 3rd or upper terraces of the Lot.
Varieties: 100% Malbec
Vine care: leaf thinning twice on both sides to brind light and air to the fruit and limited yield achieved by removing excess grapes whilst green.
Wine making:
grapes selected and 100 % de-stalked; long maceration (+ or-35 days) with strict temperature control. The cap of marc is pushed under to facilitate extraction twice daily until the density reaches 1050, then once daily down to 1010.
Maturing:

malolactic fermentation in barrel, then about 20 months maturation in same oak barrels.

Serving:
Decant (or open several hours earlier) before drinking and serve at around 15° or 160°C.

Powerful and greedy Cahors

Finesse and concentration. The nose evokes blackcurrant, blackcherry, plum, balckberry, cigars, nutmeg and cedarwod. Supple in the mouth, with softened tannins, it calls to mind cherry, raspberry and liquorice. A wine which can wait for some years.
Serve decanted (or opened several hours previously) before enjoying at about 15-16°.
Suggest accompaniment: Quercy farm lamb, duck breast, cepes, salers Cantal cheese.

Soils On early quaternary mindel period deposits of the upper terraces and calcareous clay of the secondary era kimmeridgian limestone plateaux.
Varieties: 97 % Malbec 3 % Tannat
Age of vines: from 30 to 50 years old.
Vine care:

leaf thinning on north or east side of rows in early summer then on other side in late august to bring plenty of air and sun to the fruit. Yield limited to a maximum 35 hl/hectare removing excess unripe grapes.

Wine making: grapes sorted and 100 % de-stalked; long maceration (35 to 40 days) under strict temperature control. Extraction by pushing the cap of marc under the surface twice a day until a density of 1050 is reached, then once a day down to about 1015/1010..
Maturing:
12 months in oak barrels of which 50 % are new each year.
Serving:
 Decant (or open several hours earlier) before drinking and serve at around 15° or 160°C.

Circles and structured Cahors

IIntense and finely balanced. Deep, glowing red, very aromatic (blackberry, humus...), with well-balanced tannins and a lovely final impression in the mouth.
Serve decanted (or opened several hours previously) before enjoying at about 15-16°.
Suggested accompaniment: roast poultry, grilled meats, fish in red wine sauce.

Soils: on riss period deposits of the second quaternary terraces and mindel deposits of the lower quaternary third terraces. Varieties: 70 % Malbec  25 % Merlot   5 % Tannat Age of vines: from 30 to 50 years old. Vine care: leaf thinning only on north or east side of rows to allow air to reach the fruit; yield limited to 50/55 hectolitres/hectare by removing excess unrige grapes. Wine making: varieties kept separate. Grapes sorted and 100 % de-stalked; long maceration (+ or-30 days) with strict temperature control. The fermenting juice is not frequently pumped from bottom to top of the vat; but half the volume is once or twice transferred to a clean vat then pumped back over the marc in the original one until a density of about 1040 is reached; whilst the orther half is pushed under the cap of marc twice a day till the density is 1050 then just once a day until 1010/1015 is reached. Maturing: 18 months in cement and stainless steel vats. Serving:  Serve about 15-16°C.

Flexible and fruity.

 

A dress garnet with expresses the aromas of red fruits: blackburrant, blackberry, redcurrant, cherry, violet with carefully doses flexible tannins. 

Serve: 15 -16°C.

Recommended dish: As an aperitif with one types, with some meat products, grilling, mediterranéenne kitchen, salad compsed, cheeses.

Soils: On 2nd or middle terraces composed of Riss alluvial deposits from the Quaternary era.
Varieties: 80 % Malbec 20 % Merlot
Vine Care: Leaf thinning on North of East side of rows in early summer to bring plenty of air and sun to the fruit. Yield limited by removing excess unrige grapes.
Wine making:

Grapes sorted and 100 % destalked. Short maceration from 6 to 8 days with control of the temperatures. Soft extraction by pigeage moderate (1 time per day up to 1050 of density).

Maturing : Six at eight months in stainless steel vats with clickings (oxygen contribution) frequent to develop to the maximum the aromatic intensity (blackcurrant, blackberry, cherry, currants, violet).
Serving: Serve at about 15° or 16°C.

Delicacy and freshness of the fruit.

 

A dress of a rose to strive for purple images which expresses a mixture of freshness of red fruits, softness of apple and pear and acidulous of redcurrants in a fatty and round context.

 

Serve: freshly, 8 -10°C.

Recommended dish: As an aperitif with one knocks, grilled meats, fish, Asiatic kitchen. Ideal the summer with salads in fruits and vegetables of seasons.

Wine making:

Grapes sorted and 100 % destalked.

Maturing : Three af four months in stainless steel vats before the setting out of bottle wich enables him to the expresssed fully an pear and apple red fruits flavous in a fally and round context, prefering serenity with promptness.
