WINES

Cahors are wines which are full of flavour ! They have a consistency, a presence in the mouth which is memorable.

 

 

 

They are incontestably rich and their velvety tannins clothe the palate harmoniously.
What distinguishes them from the other great wines of the South-west and from the Argentinian Malbecs is their freshness and liveliness.
Linked to the natural acidity of the wine, these qualities leave the palate clear and five the Cahors their exceptional aptitude for aging. When young, the wines have a dense, often even black appearance. Their rich and complex scents evolve in a surprising way over time.

 

 

CAHORS : LA COMMANDERY 2015

Powerful and greedy Cahors

 

Intense and Complex

SOILS : On Early Quaternary Mindel period deposits of the upper terraces and calcareous clay of the Secondary  Era Kimmeridgian limestone plateaux.

VARIETIES :  100 % Malbec

VINE CARE: Leaf thinning on North or East side of rows in early summer then on other side in late August to bring plenty of air and sun to the fruit. Yield limited to a maximum 40 hectolitres/hectare by removing excess unripe grapes.

WINE MAKING : Grapes sorted and 100 % de-stalked and long maceration (35 to 40 days) under strict temperature control. Extraction by pushing the cap of marc under the surface twice a day until a density of 1050 is reached, then once a day down to about 1015/1010.

MATURING : 12 months in oak barrels of which 50 % are new each year.

SERVING : Decant (or open several hours earlier) before drinking and serve at about 15° or 16°C.

CAHORS : CHATEAU LA CAMINADE 2017

Circles and structured Cahors

 

SOILS : 2/3 On Riss period deposits of the second Quaternary terraces, 1/3 On Early Quaternary Mindel period deposits of the upper terraces.

VARIETIES : 70 % Malbec -  25 % Merlot  -  05 % Tannat

VINECARE : Leaf thinning only on North or East side of rows to allow air to reach the fruit; yield limited to 50/55 hectolitres/ hectare by removing excess unripe grapes.

WINE MAKING : Varieties kept separate. Grapes sorted and 100 % de-stalked; long maceration (+ or - 25 days) with strict temperature control. The fermenting juice is not frequently pumped from bottom to top of the vat; but half the volume is once or twice transferred to a clean vat then pumped back over the marc in the original one until a density of about 1040 is reached; whilst the other half is pushed under the cap of marc twice a day till the density is 1050 then just once a day until 1010/1015 is reached.

MATURING : 18 months in cement and stainless steel vats.

SERVING :  Serve at about 15° or 16°.

CAHORS : SEUL "sans sulfites ajoutés ...je suis" 2018

Powerful and delightful

 

SOIL:   T3 - 3rd terrasses du Lot or high terrasses on « Mindel du quaternaire ancien ».

DENSITY vine plants/ha :   5000

AVERAGE AGE OF VINES: 30 years

VARIETY:  Malbec 100%

VITICULTURE: Vine leaf stripping on the north or east side of the row at the beginning of summer, then on the other side at the end of August for good aeration and sunshine of the fruits. Limited yields, thanks to harvesting in green, at 45 hl/ha maximum.

VINIFICATION: Mechanical harvest sorted manually on the table then destemmed 100 %. No sulphite added and an immediate start of the fermentation to avoid a possible occupation by different yeast or harmful native bacteria. Control of the temperature at 25°C maximum to favor the aromatic finesse and a long yeasts activity. The punching is favored for the fineness of its poly-phenolic extraction.

AGEING : From 4 to 6 months only, in stainless steel tanks and cement and avoiding contact with air during racking. No sulphite added for bottling. This is meant to be early (beginning spring) to favor the freshness of the fruit and definitely protect the wine from oxidation.

SERVICE TEMPERATURE: From 15° to 17°C.

IGP COTE DU LOT MALBEC ROUGE
 

 

SOILS : On 2nd or middle terraces composed of “Riss” alluvial deposits from the Quaternary era.

VARIETIES: Malbec (or Cot)

VINE CARE : Leaf thinning on North or East side of rows in early summer to bring plenty of air and sun to the fruit. Yield limited by removing excess unripe grapes.

WINE MAKING :Grapes sorted and 100 % destalked. Short maceration from 6 to 8 days with control of the temperatures. Soft extraction by pigeage moderate (1 time per day up to 1050 of density).

MATURING :

Six at  eight months in stainless steel vats with clickings (oxygen contribution) frequent to develop to the maximum the aromatic intensity (blackcurrant, blackberry, cherry, currants, violet).

SERVING : Serve at about 15° or 16° C.

SOILS : On 2nd middle terraces composed « Riss » alluvial deposits from the Quaternary era.

VARIETIES: Malbec (or Cot)

WINE CARE : Leaf thinning on North or East side of rows in early summer to bring plenty of air and sun to the fruit. Yield limited by removing excess unripe grapes.

WINE MAKING : Grapes sorted and 100 % destalked.

MATURING : Three at four months in stainless steel vats before the setting out of bottle wich enables him to be expressed fully an pear and apple red fruits flavous in a fally and round context, prefering serenity with promptness.

SERVING : Serve at about 10° or 12°C.
